Six Week Muffins from Katie Burton

6 c bran cereal
2 c boiling water
1 c melted shortening
3 c sugar
4 eggs beaten
4 c milk (or buttermilk)
5 tsp baking soda
5 c flour
2 tsp salt
*Pour water over 2 c bran cereal and let stand while assembling other ingredients. Mix in shortening. Mix in the rest of the cereal with sugar, eggs, and milk. Sift flour, salt, soda and combine with other ingredients. Bake in a muffin cups or sprayed muffin pan at 400 degrees for 15-20 minutes. *mixture will keep 6 weeks in the fridge. May add grated apples, dates, nuts, peaches, etc. May need to adjust baking time when adding extras.
