Peanut butter temptations (Semi homemade way) from Cheri Wilson

1 package of peanut butter cookie mix
Mini muffin pan
1 package of Reeses’ peanut butter cups

Spray pan and preheat oven to 375. Follow directions on the package of cookie mix. Place a spoonful of dough in each cup of the mini muffin pan. Bake at 375 for about 12 minutes. While cookies are in the oven, unwrap peanut butter cups. When cookies are pulled out of the oven gently press peanut butter cups in each cookie. Let cool in the pan so it will hold its shape.

Makeover Cheesecake Bars Recipe from Heidi Slater

A very rich, creamy cheesecake filling over a thick nutty crust.

Ingredients
1 cup all-purpose flour
1/2 cup ground walnuts
3 tablespoons brown sugar blend
1/4 cup cold butter

FILLING:
4 ounces reduced-fat cream cheese
4 ounces fat-free cream cheese
1/3 cup sugar
2 teaspoons all-purpose flour
1/4 cup egg substitute
2 tablespoons fat-free milk
1 tablespoon lemon juice
1/2 teaspoon pure vanilla extract

Directions
In a small bowl, combine the flour, walnuts and brown sugar blend; cut in butter until crumbly. Set aside 2/3 cup for topping; press remaining crumb mixture into an 8-in. square baking dish coated with cooking spray. Bake at 350° for 9-11 minutes or until lightly browned.

Meanwhile, in a small bowl, beat the cream cheeses, sugar and flour until light and fluffy. Beat in the egg substitute, milk, lemon juice and vanilla just until blended. Pour over crust; sprinkle with reserved crumb mixture.

Bake for 12-15 minutes or until filling is set. Cool on a wire rack for 1 hour. Refrigerate for at least 2 hours. Cut into bars. Refrigerate leftovers. Yield: 9 servings.

White Christmas Punch (lime slush punch) from Sharon Call

2 cups sugar
8 cups water
1 12 oz can frozen limeade
5 fresh limes juiced
2 12 oz cans of 7up or Sprite (lemon-lime soda)

Combine sugar and water and heat slightly on the stove to dissolve sugar.
Add frozen limeade and juice of 5 limes. Pour into shallow pan (ie: ice bucket works great) Cover.
Freeze
It can be kept in freezer up to 3 months.

Remove at least 1 hour before serving and break in to slush.
Place pieces of frozen slush into punch bowl and cover with 7up or Sprite
Makes 18 1/2 cup servings

Gingerbread House Recipe from Melanie Dallon via Jennifer G

6 ¾ c. flour
1 tablespoon cinnamon
1 ½ teaspoon ginger
½ teaspoon salt
1 ½ c. light corn syrup
1 ¼ c. packed light brown sugar
1 c. margarine

Preheat oven to 350 degrees. Stir the dry ingredients together in a large bowl.
Combine light corn syrup, light brown sugar, and margarine in a 2-quart sauce pan. Stir constantly over medium heat until margarine is melted. Stir the liquid into the flour mixture. Mix well using hands to mix as dough becomes stiff. Chill the dough until it is easy to handle. Dough can be stored in refrigerator in a plastic bag indefinitely. When ready to roll dough out warm it to room temperature. Roll the dough out to 1/8 inch thickness on cookie sheet. Hint: mark 1/8 inch on toothpick. Stick tooth pick into rolled out dough to measure thickness of dough. Using the patterns provided cut the dough into the required shapes. Bake for 12 to 15 minutes or until golden brown. Check for air bubbles during baking and poke them with a sharp knife or a toothpick. When baking is done, slide the hot gingerbread onto a large cooling rack. Make sure it lies flat and cools on a flat surface.

Royal Icing for gingerbread houses from Jennifer Giorgis

2 lbs. pwd. sugar
6 T. meringue powder
3/4 c. water
1/2 tsp. cream of tartar

Mix with electric mixer approximately 7 minutes until very stiff.

Royal Icing II

2 lbs. pwd sugar
1/3 c. meringue powder
3/4 c. water
1 tsp. cream of tartar

Mix with electric mixer approximately 5 minutes until stiff peaks form.


Egg whites at room temperature can be substituted for meringue powder—you need about 5 or 6 per recipe.

Powdered Milk

Drinkable Powdered Milk

1 gallon water + 3cups of non-instant powdered milk = 1 gallon milk
1 quart water + 3/4c non-instant powdered milk = 1 quart Milk
1 cup water + 3TBSP non-instant powdered milk = 1 cup milk

Mix in the dry milk a little at a time until well blended. Use a whisk to mix which adds air. You can also pour the milk through a fine mesh strainer to get any remaining lumps out.

Options to improve the taste of powdered milk
• Use 1/2 the amount of TABLE CREAM as you would dry milk
• 1/2 tsp vanilla and sugar
• Mix with fresh milk (this is good to help get use to it, gradually mix less fresh with powdered milk)

Brother Taylor’s dill pickles taught by Brother Thomas

In 3-6 months they will be ready to eat.

"Cafe Rio" Sweet Pork from Heather Christensen

1-3 pounds of pork loin
2 15oz tomato sauce
1 1/2 c brown sugar
1 can coke (don't use diet)
1 garlic clove diced
1/4 c cilantro minced

Put all ingredients into crock put and cook for 4 hours on medium (or high if your crock pot doesn't have a setting for medium)

***For the activity we used a 9 pound roast with the bone-in. We tripled the sauce and there was a TON of sauce left - YUMMY

"Cafe Rio" Rice from Heather Christensen

8 cups water
8 cubes of chicken bouillon
2t cumin
4 cloves garlic (2 bulbs)
12 T butter
12 sprigs of cilantro (knot up and remove after cooking - or if you love cilantro chop up and leave in rice)
4 cups rice

Put all in pot, cover bring to bowl and reduce down to simmer, stir occasional after boiling, cook until done (approx 30 minutes)

"Cafe Rio" Pico de Gallo

About 3 Roma tomatoes diced
1 small-ish jalapeno pepper, diced & remove seeds (add seeds to add more kick)
1/2 small onion (white onions are traditional, but I love the color and flavor of red onions)
lime juice

Mix all together, chill and serve

"Cafe Rio" Cilantro Ranch Dressing from Heather Christensen

1 package dry ranch dressing + packet ingredients
14-16 oz, Herdez salsa verde (green) (Herdez is a brand)
1/2 bunch cilantro coarsely chopped (or just blend with dressing)
1 clove garlic (minced)
Juice from 1/2 fresh lime
2-3 jalapenos seeded and coarsely chopped
*you can add some of the seeds to add more kick to the dressing

Make ranch according to directions on packet
Blend all ingredients in blender w/ranch

Chill & serve

French Onion Soup from Sasha Staley

(35 servings)

· 2 cups and 3 tablespoons butter

· 2 tablespoons and 2-3/4 teaspoons salt

· 17-1/2 large red onions, thinly sliced

· 17-1/2 large sweet onions, thinly sliced

· 8-3/4 (48 fluid ounce) cans chicken broth

· 8-3/4 (14 ounce) cans beef broth

· 4-1/3 cups red wine ( I am just going to add more beef broth instead of the wine)

· 1/2 cup and 2 teaspoons Worcestershire sauce

· 17-1/2 sprigs fresh parsley

· 8-3/4 sprigs fresh thyme leaves

· 8-3/4 bay leaf

· 1/2 cup and 2 teaspoons balsamic vinegar

· salt and freshly ground black pepper to taste

· 35 thick slices French or Italian bread

· 35 slices Swiss cheese, room temperature

· 4-1/3 cups shredded mozzarella cheese, room temperature

· 35 pinches paprika

Fluffy Dinner Rolls from Melanie Dallon

2 c. milk
1 1/2 to 2 T. yeast
1/2 c. sugar
3/4 c. melted shortening
4 eggs, well beaten
6 cups flour
2 tsp. salt

Heat milk and cool. Dissolve yeast and sugar. Add remaining ingredients. Dough will be very soft. Put in refrigerator for 3-4 hours. (May be kept overnight or for 2-3 days.) When ready, roll dough on floured board and make into shapes. Place on greased baking sheet and let rise until double in bulk. Bake 10-15 minutes at 400 degrees.

PERFECT DINNER ROLLS from Tiffani Lau

2 Tbsp yeast
1/2 C warm water
2 C scalded milk
1/2 C sugar
1/2 C shortening
2 tsp salt
7 C bread flour (works best)
2 eggs

In a small bowl, add yeast and the warm water, set aside. In your mixer bowl, combine sugar, shortening, salt and scalded milk. When mixed well, add 3 cups of flour. Beat well. In a small bowl, beat 2 eggs, and then add them to the large bowl. Mix well again. Add yeast. Mix. Add 4 more cups of flour and knead about 3-5 minutes. If dough is too sticky, add a little more flour. Place dough in bowl and cover with a dish towel. Let it rise for 1 hour and 15 minutes. Separate the raised dough into three equal parts. Roll out the dough like a round pizza (about 16”). Take a pizza cutter or knife and cut the dough into triangular pizza wedges until you have 16 triangle shapes. Start at the large end and roll the dough into crescent roll shapes. Place the roll crescents on a cookie sheet. Repeat with the second ball of dough. Cover pans with a dish towel and let rise another 1 hour 15 minutes. Bake raised rolls at 350 for 12-14 minutes or until lightly golden brown. This whole process takes approximately 3 hours, but the end results are well worth it. This dough can be used for pizza, calzones or regular rolls.

Cinnamon Rolls: Divide dough into 2 balls – (makes one pan of cinnamon rolls and one pan of regular rolls)
Roll one of the balls into a large rectangular. Combine 1/3 cup white sugar, 1/3 cup brown sugar, and 4 tsp. cinnamon in a bowl. Mix well. Spread dough with thin layer of butter then sprinkle with sugar mixture. Roll up dough into log, then cut in 1” sections and place on pan. Let rolls rise for about an hour (till they double in size). Bake at 350 for about 15-20 minutes or until lightly golden brown. When slightly cooled top with glaze (2 cups powdered sugar, 1 tsp vanilla, 4 Tbsp milk).

CHOCOLATE SHEETCAKE from Tiffani Lau

1/2 C buttermilk
1 tsp baking soda
2 C Flour
2 C Sugar
4 Tbl cocoa
1 cube of butter
1/2 C vegetable oil
1 C water
2 eggs
1 tsp vanilla

Combine buttermilk and baking soda. Let sit. In a mixing bowl combine flour, sugar, and cocoa. In saucepan bring butter, oil, and water to a boil. Pour boiling mixture over flour mixture. Mix well. Add buttermilk mixture, eggs, and vanilla. Mix very well. Pour into a greased jelly roll pan. Bake at 375 degrees for 20 minutes.

Frosting
1 1/2 cubes of butter
1/2 C milk
6-7 cups powdered sugar
6 Tbl cocoa
1 1/2 tsp vanilla

Heat butter and milk in saucepan till very hot but not scalding or boiling. Pour over powdered sugar and cocoa. Add vanilla. Beat with a hand held electric mixer. Frosting should be firm not runny. Spread on hot cake.

FROSTED BROWNIES from Sarah Lundwall

FROSTED BROWNIES
2 cups sugar
2 cups flour
1/2 tsp salt
1 tsp cinnamon
Stir the above in bowl and set aside.

2 eggs (whipped w/beater)
1/2 cup buttermilk
1 tsp baking soda
1 tsp vanilla
Mix the above in bowl and set aside.

1 stick butter
1/2 cup shortening
1 cup water
3 TBS cocoa
Melt the above in a large saucepan/pot and boil. Then take off of heat and add dry ingredients into mixture until mix well. Add egg mixture and stir till blended in/mixed well. Pour into jellyroll pan (sheet pan w/edges) and bake in preheated 350 degree oven for 25 minutes.

Start the frosting 5 minutes before brownies are completely cooked.
FROSTING
1 stick butter
3 TBS cocoa
6 TBS milk
4 cups powdered sugar
1 tsp vanilla
1 cup chopped walnuts (optional)

Heat first 3 ingredients in medium saucepan until melted. Take off of heat and add remaining ingredients. Pour over brownies as soon as the brownies are done cooking in the oven. Cool completely and serve.

Spinach Salad from Sasha Staley

8 cups baby spinach
1/2 cup pecans, toasted and chopped**
1/3 cup Gorgonzola cheese or feta or ½ and ½
1/2 cup dried cranberries
** toast pecans: coat in vegetable oil and sprinkle kosher salt. Put in the oven or toaster oven until they are aromatic…about 7 mins **

Dressing
1/2 cup olive oil 1/4 cup balsamic vinegar
2 small shallots, chopped 1 Tbsp Dijon mustard
Salt and pepper to taste 1 Tbsp sugar

Mix all ingredients in blender. Pour over spinach, just enough to coat. Then top salad with pecans, gorgonzola, and cranberries

Chicken & Berry Salad from Anne Fuller

5 cups bite-size pieces mixed salad greens
1 cup strawberry halves
1/2 cup blueberries
1/2 cup raspberries
1/4 cup honey-roasted peanuts
1/4 cup vinaigrette dressing
2 Tbsp crumbled blue cheese
6 oz chilled grilled chicken strips, cut into bite size pieces

Broccoli Salad from Laurie Thomas

Toss together:
1 1/2 lb. broccoli, trimmed & finely chopped
10 Slices bacon, cooked crisp
5 green onions chopped
1/2 C craisins or raisins

Mix together:
1 C mayo
1/2 C sugar
1/4 C Vinegar

Mix well with Broccoli mixture & refrigerate 1 hour

Fruit Dip from Tiffani Lau

1 8oz pkg of Cream Cheese
1 7oz jar of Marshmallow Cream
1 Tbsp Orange Juice
1 tsp grated orange peel
dash of ground ginger

Beat all ingredients with electric mixer until well blended. Refrigerate till ready to serve.

Curried Spinach Salad from Tiffani Lau

2 lbs fresh spinach or romaine lettuce
3 apples, tinly sliced
1/2 cup golden or cran raisins
2/3 cup honey roasted peanuts
1 orange separated into pieces
2 Tbsp sesame seeds

Curry Dressing
1/2 cup white wine vinegar
2/3 cup canola oil
1 Tbsp apple butter or peach/apricot jam or chopped chutney
1 tsp curry powder
1 tsp salt
1 tsp dry mustard
1-2 drops Tabasco sauce

Prepare dressing first to allow flavors to blend. Combine all dressing ingredients into a jar and shake until blended well. For best flavor, allow dressing to stand for 2 hours at room temperature before serving.

Combine all salad ingredients and then toss with curry dressing.

Strawberry Spinach Salad from Emily Burk

1 lemon
2 Tbs White Wine Vinegar
1/3 cup Sugar
1 Tbs Vegetable Oil
1 tsp Poppy Seeds
1/4 cup sliced natural almonds, toasted
8 oz Strawberries (hulled & quartered)
1/2 medium cucumber, sliced and cut in half
1/4 small Red Onion
1 Package Baby Spinach

Zest 1 tsp lemon, juice 2 T. Mix with the rest of the dressing ingredients. Toast almonds at 350 degrees for 10-12 minutes. Hull and quarter strawberries. Score cucumber, remove seeds, cut slices in half. Slice onions. Mix with Spinach.

Pasta Chicken Salad from BilliJo House

2 cups of pasta
1/2 lb cooked cubed chicken
1 apple diced
1-2 stalks of chopped celery
1 1/2 cups of grapes cut in half
1 cup mayo
salt and pepper to taste
*optional 2 Tbsp of Honey mustard

Potato Salad from Sarah Lundwall

6 potatoes (about), peeled, cut into chunks and boiled
3-4 hard boiled eggs, sliced w/egg slicer
cucumber, chopped
celery, chopped
onion, chopped
mayonnaise
mustard
vinegar
dried dill weed
dried parsley flakes
garlic powder
salt & pepper
little sugar

Place the first 5 ingredients in a large bowl; mash potatoes to desired consistency. In a medium bowl, add the rest of ingredients and whisk together. Use 2 parts mayo to 1 part mustard. Add little vinegar, less than a capful and add spices to taste. Add wet ingredients to dry ingredients a little at a time until desired consistency. Chill till ready to serve.

Grated Carrots
Green Olives, chopped
Chicken, cooked and shredded
Ham, diced

Toss all together and mix with a light mayo dressing

Pineapple Pretzel Salad from Dee Dee Minino

1 Stick Butter
1 Cup Sugar (total)

16 oz Crushed Pineapple (drained)
8 oz Softened Cream Cheese
8 oz Cool Whip
1 Small Bag Pretzels (not sticks)

Heat oven to 400 degrees

Melt 1 stick of butter and ½ cup sugar together in microwave. In a bowl pour mixture over 1 cup of crushed pretzels.

Spread mixture onto a cookie sheet. Bake at 400 degrees for 7 minutes. Let cool, break into small pieces, put into baggie & set aside in the refrigerator.

In a bowl beat together softened cream cheese, cool whip and ½ cup sugar until smooth. Stir in crushed pineapple. Place in refrigerator to chill

Just prior to serving salad, mix in pretzel pieces.

1 lb. cooked spaghetti
1 bottle 8 oz. Italian dressing
4 T. Schillings salad supreme spice
tomatoes- chopped
cucumbers- chopped
(any veggies could be used)

Put the Italian dressing on the spaghetti while the spaghetti is still hot.
Mix all ingredients well and then refrigerate until chilled.

Resurrection Cookies made by Cherlyn Call @ YW's

These are to be made the night before Easter

1 cup whole pecans zipper baggie
1 tsp. Vinegar wooden spoon
3 egg whites tape
A pinch salt Bible
1 cup sugar

Preheat the oven to 300 degrees (this is important--don't wait until you are half done with the recipe!)

Place pecans in zipper baggie and beat them with the wooden spoon to break into small pieces. After Jesus was arrested, He was beaten by the Roman soldiers. (Read John 19:1-3)

Smell the vinegar. Put 1 tsp. vinegar into mixing bowl. When Jesus was thirsty on the cross, He was given vinegar to drink. (Read John 19:28-30)

Add egg whites to vinegar. Eggs represent life. Jesus gave His life to give us life. (Read John 10:10-11)

Sprinkle a little salt into each person's hand. Let them taste it and brush the rest into the bowl. This represents the salty tears shed by Jesus' followers, and the bitterness of our own sin. (Read Luke 23:27)

So far, the ingredients are not very appetizing. Add 1 cup sugar. The sweetest part of the story is that Jesus died because He loves us. He wants us to Love and belong to Him. (Read Psalm 34:8 and John 3:16)

Beat with a mixer on high speed for 12 to 15 minutes until stiff peaks are formed. The color white represents the purity in God's eyes of those whose sins have been cleansed by Jesus. (Read Isaiah 1:18 and John 3:1-3)

Fold in broken nuts. Drop by teaspoons onto wax paper covered cookie sheet. Explain that each mound represents the rocky tomb where Jesus' body was laid. (Read Matthew 27:57-60)

Put the cookie sheet in the oven, close the door and turn the oven OFF.

Give each child a piece of tape and seal the oven door. Jesus' tomb was sealed. (Read Matthew 27:65-66)

GO TO BED! They may feel sad to leave the cookies in the oven overnight. Jesus' followers were in despair when the tomb was sealed. (Read John 16:20 and 22)

On Easter morning, open the oven and give everyone a cookie. Notice the cracked surface and take a bite. The cookies are hollow! On the first Easter, Jesus' followers were amazed to find the tomb open and empty. (Read Matthew 28:1-9)

Granola Bars from Crystal Young served @ activity days

4-1/2 cups rolled oats
1 cup whole wheat flour
1 tsp baking soda
1 tsp vanilla
1 cup melted butter
1 cup honey
1/3 cup brown sugar

Optional add ins for better nutrition or flavor

1/4 cup flax seed meal
1 cup chopped nuts
1 cup wheat germ
2 cups chocolate chips
2 frozen and then thawed bananas

Mix all the ingredients. Bake at 300 degrees for 18 minutes until lightly golden brown. Do not over bake.

This recipe for Granola bars was emailed to me. It is the best combination I have tried. The children like lots of chocolate chips but I make them with lost of different add ins with wonderful results. These are soft and chewy.

Easiest bread ever from Billi Jo House

Here is my bread recipe - easiest bread ever

6 1/2 cup flour I usually do part wheat / white flour
3 cups of water
1 Tbsp. yeast
2 tsp salt
(if you use whole wheat flour, add gluten too - generally 1/4 cup)

put all ingredients in a bucket with a lid and stir until all the flour is well mixed, let sit with a lid not tightly on for 2 hours then refridgerater , Ice cream buckets work

I like adding nuts and seeds

bake at 455 for 35-45 min

Mexican Chicken (Crockpot) from Christine Bates

Put 4-6 frozen boneless, skinless chicken breasts in crockpot. Add a jar of salsa, a can of drained black beans, and a bag of frozen corn or 2 cans of corn. Cook on low for 6 to hours- till done. Take a brick of cream cheese and put on top, turn the crock pot off, let it sit for about 20 minutes. Serve over rice, in tortillas, or just the way it is.

Whole Wheat Bread from Shauna Applegarth

4 c. warm water
3 Tbsp. yeast
1/3 c. oil
1/3 c. honey
1 Tbsp. salt
1/2 c. vital wheat gluten (can be purchased at most stores by the flour, especially health food stores)
7-10 c. wheat flour (I found that 7-8 was more like it. Put in 7 and knead it for a minute or two before adding any more, then add just enough that the mixer cleans the bowl).

Mix all ingredients, following directions on package for yeast. Knead in mixer for nine minutes. Divide into four sections and roll like jelly roll with rolling pin to pop all the air bubbles. Roll up like cinnamon rolls and then turn under the ends to the size of a loaf pan.
Punch together a little with your fist while in the loaf pan. Cover with towel and let rise for 20-25 minutes (no more. I found with 25 minutes of rise time, the loaves rose very high and the bread was very light. Next time I'm going to try only 20 minutes for a little denser bread.) Put in COLD oven and then turn on the oven to 350 degrees. Set timer and remove after 30 minutes. Turn out of pans and let cool
on rack. While warm, brush the top with butter. Do not refrigerate homemade bread—either freeze it or leave it out on the cupboard if it will be eaten within four or five days. Refrigerating causes it to become stale.

Bread – whole wheat, 50/50 or white from Crystal Young

Easy - 5 ingredients + water

water
yeast
sugar
flour
salt
oil

4 cups warm water (baby bottle warm)
1/3 cup sugar or honey
3 TBS yeast
8-10 cups flour (any combination of wheat and white. If using wheat flour, the dough will pull away from the bowl with less flour - closer to 8 cups. Let it mix a little longer than the white flour - 3-4 minutes. Generally 10 cups if using white flour)
1 TBS salt
1/3 cup oil

optional 1/3 cup gluten will help wheat bread stick together also.

Add all ingredients together in the order listed. Mix all ingredients. Form into loaves. Heat oven to 350 degrees while the bread rises until double in size. Bake for 30-35 minutes.


Options for a taste and texture you like: add 1/3 cup gluten, 1-2 eggs, milk instead of water, butter instead of oil, honey instead of sugar, or leave the oil out altogether and make a "french Loaf" My Grandma would let her whole wheat flour sit in the warm water for a hour to develop more of the gluten naturally in the wheat flour.

Banana Bars from Patricia Green

½ cup margarine 1 ½ cups sugar
2 eggs 2 large mashed bananas
8 oz sour cream 2 cups flour
¼ tsp salt 1 tsp baking soda

Directions: Cream margarine and sugar. Blend in eggs, bananas & sour cream. In separate bowl, mix flour, salt, and baking soda.
Stir flour mixture into batter until just blended. Spread batter into a lightly greased 10x15 jelly roll pan.
Bake at 375 degrees for about 25 minutes.

Frosting : 1 pkg. cream cheese
2 1/2 Cup powdered sugar
1tsp. vanilla
6 tbsp. margarine
1 tbsp milk
* Beat until smooth. Spread onto cooled bars.

Pampered Chef Taffy Apple Pizza from Adriane Tubaugh

Ingredients
1 pkg. refrigerated sugar cookie dough
1 pkg. cream cheese (softened)
1/2 C. brown sugar
1/4 C. creamy peanut butter
1/2 tsp. vanilla
2 Medium Granny Smith apples
1/4 C. caramel ice cream topping
1/2 C. peanuts

Directions
Preheat oven to 350* F. Shape cookie dough into a ball and place in center of Large Round Stone (or pizza pan); flatten slightly. Using a lightly floured rolling pin, roll out dough to a 14-inch circle, about 1/4 inch thick. Bake 16-18 minutes or until it's a light golden brown. Remove from oven; cool 10 minutes. Carefully loosen cookie from baking stone using a knife; cool completely on baking stone.

Combine cream cheese, brown sugar, peanut butter and vanilla in small bowl; mix well. Spread cream cheese mixture evenly over cookie.

Peel, core and slice apples. Cut apple slices in half and arrange evenly over the cream cheese mixture. (**Tip: to keep the apples from during brown, dip them into a lemon lime pop. (i.e. Sprite, Sierra Mist, 7up)

Microwave caramel ice cream topping on HIGH for 30-45 seconds or until warm; drizzle evenly over apples. Chop peanuts and sprinkle over apples. Cut into pizza wedges.

Lemon Crumb Bars from Anne Tippets

1 lemon cake mix
1/2 C cold butter
2 C crushed saltines (about 60)
1 egg
3 egg yolks
1 (14 oz) can sweetened condensed milk
1/2 C lemon juice

Beat cake mix, egg, & butter until crumbly. Stir in cracker crumbs; set aside 2 C of the mixture for topping. Press remaining crumb mixture into 9x13 pan coated with cooking spray. Bake at 350 degrees for 18-20 min or until edges are golden brown. In small mixing bowl, beat egg yolks, condensed milk, & lemon juice. Pour over crust; sprinkle with reserved crumb topping. Bake 20-25 min longer or until lightly browned. Cool and cut into bars. Store in refrigerator. Makes 2 dozen.

White Chocolate Cheesecake from Angelita Dunakey

Crust
1 c. flour 1/2 c. butter
1/4 c. sugar 1 egg yolk

Mix crust and pat into the bottom of your spring form pan, leaving some crust for the sides. Only bake the bottom at 400 degrees for 8 - 10 min.

Filling
12 oz. white chocolate chips
3 - 8oz. pkgs cream cheese (softened)
1 c. sugar
2 1/2 tsp vanilla
2 c. sour cream

Turn your oven down to 350 degrees. Melt the choc chips. Mix together the cram cheese, sugar, and vanilla until smooth. Add melted white choc. and blend for 5 min. Add the sour cream and blend to combine.
Use the remaining crust and pat around the sides of your spring form pan. Pour in the batter. Bake at 350 degrees for 30 min. Cool until room temperature and then cool in the refrigerator at least 4-5 hours. Overnight is preferred.

Chicken Tortilla Soup (Crockpot) from Tiffani Lau

1 ½ lbs boneless chicken, cooked and shredded
15-ounce can diced tomatoes
10-ounce can enchilada sauce
1 medium onion chopped
4-ounce can chopped green chilies
1 clove garlic, minced
2 ½ -3 cups water
14.5 ounce can chicken broth
1 tsp. cumin
1 tsp. chili powder
1 tsp salt
¼ tsp. black pepper
1 bay leaf
10-ounce package frozen corn or 1 can of corn (w/juice)
1 tsp dried chopped cilantro
1 can black beans (with juice)
**I also add cooked rice
In a large Crockpot, combine the shredded chicken, tomatoes, enchilada sauce, onion, green chilies and garlic. Add the water, chicken broth, black beans, cumin, chili powder, salt, black pepper, and bay leaf. Stir in the corn, rice and cilantro. Cover and cook on low 6 to 8 hours or on high 3 to 4 hours. (can cook on the stove too)
Serve with tortilla chips and grated cheese. We like to bake corn tortillas and then cut them up into strips.

*kids like it better if you blend the tomatoes and chilies

Poppy Seed Chicken from Dee Dee Minino

2 lbs Chicken Breast (boiled & cubed)
8 oz Sour Cream
1 can Cream of Mushroom Soup
1 can Cream of Chicken Soup

Boil and cube chicken breast, put in a 9x13 pan.
Mix both soups and sour cream and pour over chicken.

Top with:
1 stick butter – sliced into pats
1 sleeve Ritz Crackers – crushed
1-2 TLBS Poppy Seeds

Spread crushed Ritz crackers over soup mixture. Place butter pats sporadically on top of cracker. Sprinkle with poppy seeds.

Bake 45 minutes at 350 degrees
(great served by itself or over steamed rice)

Fast Favorite Curry Chicken from Sharon Call

4 chicken breasts
1/2 cup honey
1/3 cup mustard
1/2 tsp. salt
2 tsp. curry powder
oil--a little for browning, if desired

Brown the chicken breast in oil. In a small bowl mix honey, mustard, salt, and curry powder. Place chicken in a small glass dish and cover with sauce. Bake at 350 degrees for 30 minutes. Serve over rice.

If you are in a hurry, skip browning the chicken and place frozen chicken breasts in the pan. Bake a few more minutes (10?) I just watch it after a half hour until it there is not pink left in the chicken. This a family favorite in the Thad and Sharon Call home.

Heather's Chicken Pot Pie from Heather Christensen

1/3 C. butter
1/3 C. flour
1 Tbsp. onion flakes
2 Tbsp. chicken flavoring
1/2 tsp. salt
1/4 tsp. pepper
1 3/4 C. water
2/3 C. milk
2 C. cooked chicken
1 (10 oz.) pkg. frozen mixed veg.

Crust:
2/3 C. shortening
2 C. flour
1 tsp. celery salt
4-6 Tbsp. ice cold water

Melt butter and add flour, stirring until smooth. Add onion flakes, chicken flavoring, salt, and pepper. Add water and milk. Heat until boiling and boil 1 minute, while stirring constantly. Add cooked chicken and vegetables. Set aside. Make crust by mixing the shortening, flour, celery salt, and water.(I cut in the flour and shortening and celery salt with a pastry blender, before adding the water) Divide dough into two almost equal parts. roll out in a circle and place in pie plate. Add filling. Roll a top crust, cut slits and bake at 425 degrees for 30-35 minutes;(I put mine on a baking sheet to keep from spilliing on the bottom of my oven) let cool for 5 to10 minutes before cutting. Makes 1 pie. Can be easily doubled.

Chicken Salad from Beverly Palmer

12.5oz can of chicken (drained and broken apart)
1/2 cup finely diced celery
1 sm can crushed pineapple (drained)
1/4 cup sliced almonds
Mayo or Miracle Whip to taste

Mix together, serve on croissants or small dinner rolls.

Swiss Chicken from Emily Burk

Ingredients:
Boneless Chicken
Swiss Cheese Slices
1 small carton of sour cream
1 can of cream of chicken soup

Preparation:
In a bowl mix the sour cream and cream of chicken. Place raw chicken in the bottom of a casserole dish. Place cheese directly on raw chicken. Cover the chicken and cheese with the mix. Cover casserole dish with foil. Bake at 350 for 1 hour. Or if chicken is frozen bake at 325 for 3 hours.

Italian Chicken from Gywn Gregory

½ c chopped onions
½ c Italian dressing
½ c water
½ t garlic powder
1 t chili powder
½ t paprika
¼ t pepper
6 boneless skinless chicken breasts
2 T cornstarch
2 T cold water

1 - Spray inside of crock pot with Pam.
2 - Combine & stir all ingredients except chicken, cornstarch & 2T coldwater
3 – Add chicken, turn to coat
4 – cook on low 4-5 hours
5 - In a large sauce pan combine 2T cold water and 2T cornstarch, start cooking on medium high.
6 – remove chicken and keep warm
7- gradually add crockpot mixture to cornstarch mixture in sauce pan, stir and bring to a boil until thickened.
8 – pour sauce over chicken and serve over rice

Creamy Curry Chicken from Donna Snedaker

Large can of cream of chicken soup
1 cup mayo or sour cream
1/4 t curry
1 T lemon juice
4 chicken breasts (pre-cooked and cubed)

Cover the bottom of a 9 x 11 pan with broccoli
Mix all together and cover the broccoli
Cook for 30 minutes at 350

Top with cheese after 25 minutes, keep in oven until cheese is melted.

Chicken Enchiladas from Stephanie Morgan

4 boneless skinless chicken breasts or 1 whole chicken cooked and deboned
1 1/2 lb. Monterrey Jack Cheese grated
1 pint half and half cream
2 TB chicken Bouillon
2 TB flour
12 flour tortillas

3 qt. baking pan

Enchilada Sauce:
1 jar chili sauce
1 cup salsa
1 TB cumin
1 tsp. cayenne pepper
1/2 tsp. salt
1 tsp. pepper
3 TB Vegetable oil
1/4 onion
4 garlic cloves
1 TB Lime Juice
1 tsp. oregano

Put chicken (boneless skinless chicken breasts) in a crock pot and cook for four hours until tender. Shred chicken. In the blender add all ingredients for the Enchilada sauce and blend. Pour Sauce over chicken. In a saucepan pour cream and mix in flour and bouillon warm the cream slowly. When cream is warm have tortillas, chicken, cheese and baking dish ready to assemble the enchiladas. Dip tortillas in cream and cover completely till the tortilla is soft, lay the tortilla in the pan and fill with a spoonful of chicken topped with cheese and roll tight. Repeat this tightly packing all twelve enchiladas into the pan till full. Pour remaining cream over the top of the enchiladas and top with remainder of the cheese. Cover with tin foil and bake at 350 for 40 minutes.

Chocolate Chip Cookies from Heather Powell

1 1/2 cups butter or margarine
1 1/4 cups sugar
1 1/4 cups packed brown sugar
1 tablespoon vanilla
2 eggs
4 cups flour
2 tsp baking soda
1 tsp salt
4 cups chocolate chips

*Mix butter, sugars, vanilla & eggs. Stir in flour, baking soda & salt. Stir in chocolate chips. Bake @ 340 degrees for 12 minutes
or until light brown. Cool slightly.

**Originally, this recipe's instructions said to bake @ 350 degrees for 10 minutes, but i found 340 for 12 minutes did better
in my oven.

Snickerdoodles from Heather Powell

1/2 tsp cream of tartar
1/2 tsp salt
2 cups sugar
1 cup butter
1 tsp vanilla
2 eggs
1/4 cup milk
cinnamon & sugar

*Beat butter & add sugar. Add eggs, milk & vanilla. Add dry ingredients. Rolls into balls (I use 1 tsp measurer)
- flatten slightly with a fork or bottom of a glass dipped in sugar. Bake @ 365 degrees for 10 minutes.

**Originally, this recipe's instructions said to bake @ 375 degrees for 8 minutes, but i found 365 for 10 minutes did better in my oven.

Best Sugar Cookie from Heather Powell

1 cup butter or margarine

pinch salt
1 tsp vanilla
5 cups flour
2 tsp baking soda
2 tsp cream of tartar

*Cream butter & sugar. Add next 4 ingredients. Add dry ingredients & mix well. Roll into balls (I use a 1 tsp measurer so I don't have too big of a ball) - Roll in sugar & "smoosh" down with a fork or bottom of a glass dipped in sugar. Bake @ 340 degrees for 12 min. or until lightly browned on edges. (I cover a baking sheet with foil, spray it w/ cooking spray so they won't stick.)

Tomato Soup (served by Jill Heywood @ Diane Goss's)

Tomato Soup
3 TBS chopped onion
3 TBS chopped celery
2 tsp sugar
3 TBS butter
- saute all these in your soup pot until the veggies are golden

add to the pan
1-2 TBS flour
and stir it in until the veggies are kinda pastey

add 1 quart of homemade bottled tomatoes (or 2 cans of storebought)

Stir to incorporate and break up the veggie/flour mix. Use a couple pinches of baking soda to cut any of the acidity from the tomatoes. Stir this in until there are no more bubbles.

Before serving add 1 to 1 1/2 cups milk or cream. Salt and pepper to taste. Serve warm.

Garlic Artichoke Dip (served by Pat Johnson @ Amanda Zarling's baby shower)

Garlic Artichoke Dip
Recipe by Our Best Bites

2 8-oz. packages cream cheese (light works great), softened
1 c. mayonnaise (no Miracle Whip or fat free mayonnaise, although low-fat mayo also works great)
1 c. (packed) shredded Parmesan cheese (try to get a wedge and grate it yourself; the pre-shredded stuff in a bag doesn't melt well)
1 12-oz. jar MARINATED artichoke hearts, drained and chopped
6-7 cloves garlic, minced

Preheat oven to 350. In a large bowl, mix the softened cream cheese with the mayonnaise and shredded Parmesan cheese. Gently add in the chopped artichoke hearts and minced garlic. Place the mixture into a 9" pie plate (or divided evenly among smaller dishes) and bake for 25-30 minutes or until it's lightly browned and bubbly on top. Serve hot with slices of bread and/or tortilla chips.
