New Orleans Jambalaya from Crystal Young

2  28oz can whole tomatoes (no salt added)
2 cans 14 oz red beans or kidney beans
2-3 lbs frozen vegetables, corn, carrots, zucchini, yellow squash (equal parts)
1 large bag Success Quick Cooking Brown rice
Spice mix: (1 option: 4 cloves diced garlic, 1 bay leaf, 1/2 tsp thyme, 4 tsp paprika, 1/4-1/2 tsp    cayenne pepper)
*Cook brown rice. While rice is cooking, place tomatoes and veggies in a pot and heat. Add in spice mix and heat. When rice is done, place in a brown and serve tomato vegetable mix on top.
-Additional Info: Prepared in a large style pasta pot. Leftovers can be refrigerated or frozen. Low calorie and high in nutrient so you can eat all you want till you are comfortably full.
