Indian Beans from Crystal Young

2 cans whole tomatoes
2 cans Garbanzo Beans
Frozen Cauliflower (2 lb), peas (1/2 lb), onions (1/4-1/2 lb)
4 oz of Kale or Collards
2 large potatoes
Salt Free Curry spice mix

*Microwave the potatoes and when done, cut into 1 in pieces. (You can dice the potatoes first and cook them in a pot in just enough water to cover them) When the potatoes are done, put all other ingredients in the pot and heat. Add seasoning and top with fresh cilantro. Can also be served with brown rice which you can cook in 10 min while the potatoes are cooking by using Success Brand Quick Cooking Brown Rice.

-Additional Info: Prepared in a large style pasta pot. Leftovers can be refrigerated or frozen. Low calorie and high in nutrient so you can eat all you want till you are comfortably full.
